Pacato was born out of the cooking of Minas Gerais, but it never set out simply to reproduce it. From Minas come the ingredients, the memories, the ways of doing things and the will to welcome people — and from Minas comes, too, the freedom to experiment, to take in new references and to open new paths.
In Caio Soter's kitchen, the backyard is not an image frozen in the past. It is a place where pork, chicken, corn, cassava, okra, jiló, fruit, leaves and so many other ingredients from Minas meet technique, repertoire and invention.
The result is a cooking deeply of Minas, personal and inventive, that can be experienced in different ways. You can come for an unhurried lunch, share a few dishes, order à la carte, or get to know the kitchen more closely through the tasting menu — while the conversation carries on, the dining room stirs and new stories are made.

A cuisine of Minas, open to the world
Pacato is chef Caio Soter's restaurant in Belo Horizonte. A house where the cooking of Minas Gerais keeps taking on new forms.
Our kitchen carries the repertoire of the backyards, the small farms, the markets, the homes and the tables of Minas. It carries research, technique and curiosity, too, to set that repertoire in motion. Here a familiar ingredient may turn up in another guise, a recipe may gain new layers, and flavours from elsewhere may join the conversation without the kitchen ever forgetting where it came from.
At Pacato, the care goes into the food, the service and every choice the house makes — but the table is still a place for conversation, company and pleasure. You can try the tasting menu, choose your dishes à la carte, or share a few of them with whoever came along. There is no single way to experience the house, because Minas is also exchange, mixture, invention and the desire to welcome.

Pacato is a small house, so we recommend booking a little in advance, especially at the busiest times. We also welcome walk-ins, subject to availability in the dining room.
